Automatic line for wheat roll AL-120 is a simplified version of lavash bread machine of AL-130 series. On this line you can produce wheat roll (which is a flatbread similar to Armenian lavash) with square or rectangular shape. Sizes of lavash could be adjusted up to 400 mm in width and without limits in length.
Wheat roll is not piled in layers inside the package like traditional lavash, it is packed in cellophane bag lengthwise. This type of packaging is very convenient: you do not need to take the whole bread out, you can take as much bread out as you need. Besides, such packaging allows keeping rolls for longer time, preserving taste and protecting it from the influence of environmental threats.
Wheat roll is perfect for cooking various rolls at home. However, despite statements of the Russian manufacturers of similar equipment, wheat roll is not suitable for shawarma (kebab) production.
Wheat roll line includes:
extrusion and rolling machine;
tunnel oven with knife mechanism;
At customer’s request the line can be completed with dough preparing equipment as well as with stabilization and accumulation conveyors.
Prepared dough is put into the bunker of forming machine, which forms a continuous dough ribbon. After that dough passes through rolling machines, where thickness of dough ribbon is calibrated from 0.2 to 1.5 mm. Width of dough ribbon is regulated from 250 to 400 mm. After the rolling to a required thickness the dough ribbon gets to a tunnel oven where it is baked.
At customer’s request the unit for cutting the wheat roll to rectangular pieces of required size can be installed either before the baking or after the baking. Length of piece can be regulated by operator in a wide range.
After the baking and cutting the wheat roll is cooled and humidified.
Lavash bread machine can work in a round-the-clock mode.
