Despite the simplicity of the recipe and production technology, due to the difference in weight, thickness and size of the piece, different baking times for each individual lavash and other nuances a manual production of Armenian lavash requires considerable skill, high labor and time costs, while the percentage of rejects remains quite high. All this leads to a high cost of finished products.
The mechanization of the forming and baking process provides getting of standard pieces, what significantly simplifies the process of lavash production and reduces the rejects rate. Such production does not require highly skilled workers and considerably increases productivity.
Automating the processes of baking, moistening, stabilization and forming of dough pieces increases productivity while reducing the number of personnel.

In this case, automatic rolling and dividing machine is installed instead of a divider-rounder, rolling machine and conveyor-stacker. Baking, moistening and stabilization are performed on the same equipment.
