The existing tunnel oven was integrated into our line, what required more work to integrate the control system and redesign the loading conveyor, taking into account the characteristics of the oven.
According to customer requirements, an additional dough ribbon extruder was installed, which is working on scraps of dough returned after separation of dough pieces. The obtained additional dough ribbon is laid on the main one before rolling.
A fermentation chamber was installed on the line, what allowed automating the fermentation process. This gave an opportunity to combine high performance equipment with European quality of finished products and stringent requirements for chemical additives. The finished dough is automatically fed into the extruder of the dough ribbon.
