FORMING THE DOUGH PIECES

The dough is dispensed into aluminum molds mounted on the oven tracks. Each mold has cavities corresponding to the halves of the “walnuts.”

In the forming device, the dough pieces acquire the required geometry and are prepared for further heat treatment. The design ensures that the products are formed without flash.

BAKING

The formed blanks in aluminum molds are fed into the oven, where the baking process takes place, ensuring consistent quality and uniform baking of each half of the product.

The finished “walnut” halves are removed from the oven using a transfer unit with a vacuum block and placed onto trays with product-specific slots.

The blanks are then aligned and fed to the filling machines, which dispense the cream in measured portions.

FILLING AND ASSEMBLING «WALLNUTS»

When the cream is dispensed into the flipping device with a vacuum unit, the two halves are joined and secured together, forming a finished “wallnut” with a filling.

COOLING TUNNEL

To expand its technological capabilities, the line can be equipped with additional modules and systems.It is possible to apply additional cooling of the “walnut” in an air-cooled tunnel.

The air cooling unit can be integrated into the cooling tunnel or installed separately. The temperature in the cooling tunnel is adjustable and maintained automatically.

COOLED FILLING MACHINE HOPPER

The filling machine’s hopper can be equipped with water cooling, which is necessary for working with certain types of fillings.

For this purpose, the line is additionally equipped with a water cooling unit featuring a circulation system and temperature control.

A CLASSIC PRODUCT

The most popular and in-demand versions of the product are — cookies filled with:
boiled condensed milk, cream fillings, chocolate pastes, and walnut creams.

TWO-COLOR PRODUCTS

The line can be equipped with two dough dispensers, allowing for the formation of halves from dough of different colors. This makes it possible to produce two-tone “walnuts,” which attract customers’ attention and allow for an expanded product range.

PRODUCTS WITH TWO FILLINGS

By installing two filling machines, it is possible to dispense different types of filling into each half of the product. This technology allows for the creation of original flavor combinations and the production of new product types without changing the basic design of the line.
